Low in fat, high in fiber, vitamins and minerals, sated and not fattening. Spelt is one of the least-calorie cereal: 100g makes about 340 kcal; contains the essential amino acid methionine which is part of a lipotropic group of lipotropic substances that helps the liver to metabolize fats.
Spelt for example is a valid substitute to rice and you
can use it for soups, farrotti, summer salads, pizza, breads, pastries adding numerous benefits to our health.
Spelt can be cooked using the same methods famous to prepare risotto, bearing in mind that spelt only requires a few minutes of baking and no more.
In preparation please remember to wash the spelled and dry it thoroughly in order to eliminate impurities and make it even more digestible.
If it needs to be cooked as “farrotto” roast it briefly in a pan or pot and then brown it with wine water or vegetable broth. If you want to prepare a cold salad with rice cook in salted water 25- 30 minutes and then season it at your liking.
